CauseOne of the first things that runs through most american's minds when they think about the potato, is the state of Idaho. It is fairly common knowledge that Idaho is a large potato producer, but this vauge association didn't really satisfy my curiosity nor provide a satisfactory explanation on why the two are linked. In my quest for understanding, I wanted to look for more "deep rooted" reasons why Idaho and the potato are synonomous.The potato was first brought to Idaho, which was a territory at the time, by a missionary named Henery Spalding in 1837. He was working as a Presbytarian missionary to the Nez Perce Indians. By that time, the buffalo herds were beginning to thin out as well as other natural recources. Spalding realized that the native americans needed another food scource and encouraged them to produce their own food, rather than using their common method of hunting and gathering.He was from New York so he was already familiar with the potato. He began to show the natives how to plant potato crops, and quickly relized after a few tries, that the climate in Idaho was perfect for producing massive potato crops. By 1838, the harvest was so plentiful that the crop yielded a huge surplus and the Nez Perce began to commercialize the potato by trading with other tribes and travelers passing through. One thing that Spalding might not have realized at the time is that the climate of Idaho provides an environment which is wonderfully conducive to growing potatoes, because the soil is highly moisturized. Potatoes, in general, seem to grow better in light soil and much of its soil content contains volcanic ash which provide minerals which make potato growing easier.During the 1870's a gold rush was taking place in Idaho which brought in prospectors. In addition to that Idaho experienced the migration of several Mormon settlements. In each case, the new arrivals began to plant and produce potatoes becuase they had seen the sucess of the current occupants of the territory. By the 1890's, when Idaho was ratified as a state, farmers in Idaho began to construct vast irrigation systems utilizing the abundant water reservoirs to literally grow the potato perfectly on a state wide basis. As well as better processing systems were instituted which caused the production of potatoes to greatly increase and become the dominant agricultural export of the state.
