I stayed a month in Belize and what I regret is not going to the Cayes before the last week! If you go to Belize, I recommend the first thing you do is have some baked BBQ chicken and a Belikin (their beer) and then take a water taxi out to any one of the Cayes and stay there... truly beautiful crystal clear water (at 30 ft deep you can still see crabs and red starfish walking the ocean floor), and the people speak English and are super laid-back and good..
