We are from Southern California and prefer the mild weather.
We want to walk around the villages and country side. We are 60+ years of age.

I'd go in April or May. Ideally you'd go during the winter in time for WinterLude, but that doesn't sound like a great idea given your tastes. By May the city's thawed out and you get the beautiful spring weather to enjoy.

I would suggest July or early August if you want mild weather. We went in June several years ago and found it quite cool, especially the nights. My 3 year old son wanted a sweater at night! Seeing as it is north, and on the St. Lawrence river, that adds to the chill. Montreal (my home town) has a warmer June, but check the tourist websites for the cities, there are great festivals on in the summer. You might be willing to add a layer in order to see the things that best suit you.
