Anyone have a good recipe for using Shiitake mushrooms?

Japan's no. one agricultural product exported over the last 100 yrs. has been the Shiitake mushroom. It is supposed to be excellent for the heart. What is everyone using this for, all over the world, and how are they preparing their dishes with this vegetable?

Slice the mushroom into slices about 1/4 inches in width. Take a heated pan with some olive oil, garlic (minced) and herbs in it. Add the mushrooms. When the mushroom is fully cooked, remove from the heat and serve over whole grain pasta.

You can use it in soup (miso soup, or napa with ginger). If you're not a vegetarian, shiitake goes very well with chicken. I stir fry quartered shiitake with cubed chicken breast (with ginger and garlic, salt and pepper). Also try stir fry bamboo shoot, tomato, cubed chicken and sliced shiitake (with ginger, garlic, chili, salt and pepper to taste). Add some cooking wine too. It's yummy! yummy!
